The Cabardès: red AOC

Wine-growing in the Cabardès has existed since the Middle Ages, and Cabardès wine was first brought to the nation's attention in the early 19th century by Baron Trouvé.   The wine is the most recent AOC among the wines in the Languedoc.

Production area: From the Black Mountains in the north up to Carcassonne. 

Climate:  The mild Atlantic climate tempers the heat of the Mediterranean.  The terroirs are to be found at 100 to 350 m. in altitude.

Grape varieties: At least 40% of Atlantic varieties, such as Merlot, Caber,et-Sauvignon and Cabernet Franc, and at least 40% of Mediterranean varieties, such as Syrah and Grenache.  The remaining 20% is made up from Cot, Fer Servadou and Cinsault.

Wine appreciation: The blending of the Atlantic with the Mediterranean produces well-balanced and complex wines, the Atlantic varieties contributing refinement, liveliness and the flavour of red fruit, and the Mediterranean richness, smoothness and intensity.
