What could be more divinely decadent than a Christmas Party in a Medieval Castle combined with an exclusive 5-course dinner in our charming La Barbacane Restaurant, as Chef Jérôme Ryon and the team treat you to a culinary extravaganza with the ‘Centenary Menu’.

On you arrival day, dinner will take place in the Barbacane restaurant, one Michelin star, with a 5-course menu, matching wines, petits fours and coffee. Coco our pianist will play during dinner.

Duck foie gras, aspic Périgourdine-style, home-made Danish pastry with raisins

Lobster Newburg, vermicelli with scallop roe and cep mushrooms

Pan-fried veal fillet and sweetbread, Lyonnaise-style potatoes,
woodland mushrooms, truffle-flavoured juice

Tête de Moine cheese

Our own Black Forest cake with preserved Amarena cherries
and chocolate splitters

White wine : C de Centeille 2007, Côte du Brian
(Two ancient local grape varieties: Araignan blanc et le Riverent blanc et gris)
 
Red wine : Abbaye de Fontfroide Cuvée du Centenaire 1908 de l’Abbaye, Corbières, 2007
